Breakfast Egg Muffins


Ready in 25-30 minutes

Serves 6-10 egg muffins


Ingredients

  • 12 large egg whites

  • 6 pieces turkey bacon, crumbled

  • ½ cup spinach, roughly chopped

  • ½ cup red bell peppers, diced

  • ½ cup shredded part-skim mozzarella

  • 1 tbsp italian seasoning

  • 1 tbsp garlic powder

  • ½ tbsp turmeric

  • Salt & pepper to taste

Preparation

  1. Preheat oven to 350 degrees

  2. Prep vegetables and cook turkey bacon according to package directions

  3. In a medium bowl, whisk egg whites, Italian seasoning, garlic powder, turmeric, salt & pepper. Whisk until fluffy

  4. Add turkey bacon, spinach, red bell peppers & cheese to egg whites. Mix together until well combined

  5. Add in egg mixture and fill each muffin tin ¾ full

  6. Bake for 20-22 minutes. Keep in the fridge to grab & go on those busy mornings and enjoy!
