Cajun Chicken Pasta

If you're like me, pasta is one of your 4 food groups. In fact, it's probably the sole reason I gained weight in the first place. Enter my go-to pasta recipe. Rather than a heaping plate of carbs and sauce, the pasta is an addition to an already delicious chicken meal. This puts my craving at ease without it being the star of the dish.

Ready in 30 minutes

Serves 4 people


  • 1 tbsp avocado oil

  • 1 tbsp butter

  • 1 lb boneless, skinless, chicken breast, cubed

  • 1 yellow onion, diced

  • ½ lb pasta of choice (I like “Explore Cuisine” red lentil penne)

  • 14 oz can fire roasted diced tomatoes

  • 3/4 cup vegetable broth

  • 2 oz cream cheese

  • 2 green onions, sliced

  • 3 tsp smoked paprika

  • 2 tsp italian seasoning

  • ½ tsp onion powder

  • ½ tsp garlic powder

  • ½ tsp cayenne pepper

  • Salt & pepper to taste


  1. Cook your pasta of choice according to the package directions. Drain and set aside.

  2. Toss all seasoning together in a small bowl. Prep the chicken and combine with the seasoning mix.

  3. Add avocado oil and butter to a large deep skillet. Heat the oil/butter over medium-high heat until butter is completely melted.

  4. Add chicken and cook just until it begins to change color. Does not need to be cooked through just yet.

  5. Add in onions and continue to cook for an additional 2-3 minutes.

  6. Add pasta, fire roasted tomatoes (juices in), and vegetable broth to the skillet. Stir until combined and place lid to allow broth to boil.

  7. Once boiling, turn heat down to allow to simmer for 9-10 minutes.

  8. Add cream cheese to skillet, stir until melted and well combined into sauce. Top with green onions, and Enjoy!
