Looking for an easy and delicious meal in 20 minutes or less? Look no further. These lettuce wraps (cups, really) are so simple to make and will become an instant staple in your household. Trust me when I say, make a second batch. You'll want more later.
Ready in 20 minutes
Serves 4 people
1 (12-14 oz) package extra firm tofu, crumbled
8 oz cremini mushrooms, diced
1 tbsp avocado oil (or the oil of your choice)
1 (8 oz) can water chestnuts
1 head boston lettuce
For the sauce:
¼ cup hoisin sauce
2 tbsp light tamari/ coconut aminos
1 tbsp rice vinegar
1 tsp sesame oil
1 tbsp peanut butter
2 garlic cloves, minced
2 tsp grated ginger
In a small mixing bowl, combine all sauce ingredients, set aside.
In a large saucepan, add avocado oil at medium-high heat. Add tofu, cook for 4 minutes. Add in mushrooms, continue over medium-high heat. For an additional 3-4 minutes. Until tofu starts to golden over.
Stir in sauce mixture and water chestnuts. Lower heat and simmer for 1-2 minutes.
To serve, spoon several heaping tablespoons into boston lettuce cups. Enjoy!
