Guilt-free Pancakes

Who doesn't love a big pile of pancakes? Ever since the first time I watched Matilda I knew that was my breakfast of choice. Well, this healthy alternative, to a normally not so healthy meal, will curb your flapjacks craving in a pinch.


Ready in 15 minutes

Serves 2 people


Ingredients

  • 2 medium-sized ripe banana, mashed

  • 1 cup oats

  • 2 eggs

  • 2 tbsp baking powder

  • 1 tsp vanilla

  • Cinnamon to taste

  • ½ cup frozen blueberries

Preparation

  1. Combine mashed banana, oats, eggs, baking powder, vanilla and cinnamon to a food processor/blender/whatever you have on hand. Pulse until well blended.

  2. Add in the blueberries to the mixture.

  3. Heat a medium size nonstick sauce pan on medium heat. Scoop out ⅓ cup portions and cook until ready through.

  4. Serve with your favorite toppings. Enjoy!

Tips

My go-to topping for this breakfast is "cocowhip". A healthy alternative to whipped cream and still gives you that sweet tooth satisfaction.
