Who doesn't love a big pile of pancakes? Ever since the first time I watched Matilda I knew that was my breakfast of choice. Well, this healthy alternative, to a normally not so healthy meal, will curb your flapjacks craving in a pinch.
Ready in 15 minutes
Serves 2 people
2 medium-sized ripe banana, mashed
1 cup oats
2 tbsp baking powder
1 tsp vanilla
Cinnamon to taste
½ cup frozen blueberries
Combine mashed banana, oats, eggs, baking powder, vanilla and cinnamon to a food processor/blender/whatever you have on hand. Pulse until well blended.
Add in the blueberries to the mixture.
Heat a medium size nonstick sauce pan on medium heat. Scoop out ⅓ cup portions and cook until ready through.
Serve with your favorite toppings. Enjoy!
