Not-so-basic Avocado Toast

You didn't think I'd make a weight loss blog without an avo toast recipe, did you? Now, while we all know the truth behind avocado toast, that no one talks about, is that they all taste pretty much the same. That's why it's all about the additives! The balsamic glaze addition to this recipe takes it from basic b**** to a breakfast staple.

Ready in 12 minutes

Serves 1 person

VEGETARIAN

Ingredients

  • 2 slices bread of choice (I like “4:9 Ezekiel” sprouted whole grain bread)

  • 1 medium sized avocado, mashed

  • ¼ small red onion, diced

  • ¼ small tomato, diced

  • ½ handful cilantro, chopped

  • ½ tbsp lime juice

  • 1 tsp garlic powder

  • Salt & pepper to taste

  • Handful arugula

  • 20g fresh mozzarella cheese

  • 2 tsp balsamic glaze

Preparation

  1. Combine avocado, onion, tomato, cilantro, lime juice, garlic powder, salt & pepper to a small mixing bowl. Set aside

  2. Toast 2 slices of bread of choice

  3. To serve; evenly distribute both slices of toast with guacamole, swiss slices, arugula, top with balsamic glaze and enjoy!
