Oat Breakfast Cookies

Serves 8 cookies

Ingredients

  • 1 cup rolled oats

  • ½ cup oat flour

  • ½ cup dried cranberries

  • ½ cup unsalted sunflower seeds

  • ¼ cup ground flaxseed

  • 1 tbsp chia seeds

  • 1 tsp cinnamon

  • ½ tsp baking powder

  • Pinch of salt

  • 1 large banana, mashed

  • 3 tbsp coconut oil

  • 3 tbsp maple syrup

  • 2 tbsp oat milk

Preparation

  1. Preheat oven to 325 degrees

  2. Combine oats, oat flour, fried cranberries, sunflower seeds, ground flaxseed, chia seeds, cinnamon, baking powder & salt, to a large mixing bowl

  3. Stir in mashed banana, coconut oil, maple syrup, and almond milk until well combined. Let rest for 5-6 minutes

  4. Scoop out ¼ cup measurements on a baking sheet lined with parchment paper

  5. Bake for 16-18 minutes and enjoy!
