Roasted Cauliflower with Tahini Honey Drizzle

Serves 2 people


Ingredients

  • 1 head cauliflower, cut into small florets

  • 1 tbsp avocado oil

  • 1 tsp turmeric

  • ¼ tsp cumin

  • Salt & pepper to taste

  • 2 tbsp tahini

  • 1 ½ tbsp honey

  • 1 garlic clove, minced

  • Juice ½ lemon

  • 1 tsp red pepper flakes

  • Pomegranate seeds to garnish

  • Cilantro to garnish

Preparation

  1. Preheat oven to 425 degrees

  2. Toss cauliflower florets with avocado oil, turmeric, cumin, salt & pepper

  3. Place cauliflower on a prepared baking sheet and roast in oven for 30-35 minutes

  4. For the sauce, in a small bowl mix together tahini, honey, garlic, lemon juice, red pepper flakes, salt & pepper

  5. Drizzle sauce over cauliflower, garnish with pomegranate seeds & cilantro and enjoy!
