Tofu Scramble

Ingredients

  • 1 package (14 oz) extra firm tofu

  • 1 small white onion, finely diced

  • 2 ½ tbsp nutritional yeast (if you’re newly going vegetarian, trust me. You need this.)

  • 1 tbsp light tamari or coconut aminos

  • ½ tsp garlic powder

  • ½ tsp turmeric

  • ½ cup arugula

  • 1 tomato, diced

  • 2 garlic cloves, minced

  • 1 tbsp fresh ginger, minced

  • 1 tbsp avocado oil

  • Salt & pepper to taste

Preparation

  1. Heat avocado oil in a medium skillet over medium heat

  2. Add garlic, ginger & onion to the pan. Cook until onions are soft, about 3-4 minutes

  3. Crumble tofu by hand and add it to the pan. Mix the tofu and onion together until well combined. Let cook for about 5-7 minutes. Stir frequently

  4. Add tamari/coconut aminos, nutritional yeast, garlic powder and turmeric. Cook for 6-7 minutes and continue to stir

  5. Add in the arugula & tomatoes. Stir until spinach wilts

  6. Season with salt & pepper and enjoy!
